I have always loved the fact that Tiramisu translated into English means ‘pick me up’. If you are anything like me then there are many days when you could do with a pick me up. A wonderful friend provided for me the perfect antidote for those dreary winter days in the form of cookies & champagne! All you need is a bottle of champagne in the fridge, some good company & chocolate chip cookie dough in the freezer. Yes you heard me correctly, cookie dough in the freezer. The beauty of this is that you can make the dough days in advance. You cut off the number of cookies you’d like & after 11 mins in the oven, voila you have freshly baked gooey chocolate chip cookies!
The recipe I use is loosely based on The Hummingbird Bakery’s Chocolate Chip Cookies but adapted to have extra chocolate in it!
Chocolate Chip Cookies & Champagne Recipe
Ingredients
- 225g unsalted butter
- 350g soft brown sugar
- 2 eggs
- vanilla extract to taste
- 400g plain flour
- 1/2 tsp finely ground salt
- 2 1/2 tsp bicarbonate of soda
- 100g milk chocolate pieces
- 150g dark chocolate pieces
Method
- Preheat fan oven to 170 degrees.
- Grease a baking tray
- Wizz together butter & sugar in an electric mixer until light & fluffy
- Add eggs in one at a time, mixing lightly for each egg
- Add vanilla extract
- Mix together Flour, salt & bicarbonate of soda & add to the mixture
- Mix slowly in an electric mixer until a smooth dough is formed
- Add in chocolate pieces & mix slowly so that they are evenly distributed
- For cookies that are to be eaten straight away, put on greased baking tray & cook for 9 minutes
Frozen Chocolate Chip Cookie Dough
- Roll the dough into a long thin sausage shape
- Wrap in cling film & place in freezer
- When ready to cook, prepare oven & baking tray as above
- Chop off as many segments of dough that you want cookies
- Place in oven for 11 minutes
- Eat!!
